Where there's food cooking, there is a Jack lurking. Always. Lately I've been letting him help me cook at the stove top since I can't get him to stay out of the kitchen anyway! Here he is after our trip to Costco, one of his favorite places to go (for the food demonstrations I'm sure), stirring up some pasta sauce with ingredients we bought at Costco. He says he wants to be a chef when he grows up, loves food passionately, and enjoys watching the Food Network just as much as Caillou and Mickey Mouse Clubhouse!
Here is the easy, delicious pasta we made. I got the recipe from Jackie, who saw Giada make it on Everyday Italian. I love it because I can get almost everything for it at Costco.
Tomato-Basil Pasta with Fresh Mozzarella
1 lb. cooked rotini pasta
grape or cherry tomatoes (I buy the grape ones at Costco), cut in half
fresh mozzarella cheese, cubed (from Costco)
fresh basil
olive oil
s&p
garlic, minced
shallots, diced
Saute garlic and shallots in olive oil. Then add tomatoes and cook until soft. Season with s&p. Add drained pasta to tomatoes and stir in cheese and basil. That's it! I like to add pine nuts too.

Jack does love food, but I think he loves the conversation that goes along with it. Today at the park, he grabbed his ham and cheese roll but then brought it over to the bench where I was sitting and told me all about how he was excited to eat it.
